Many of you may know, that we at "The Campbell House" live on a tight budget. On this page, I offer some of my favorite recipes that go a long way with very little money. Yet again, I rarely measure. Just a little of this and a little of that, a little taste, and then more of this and that, if needed. Also, I like quick and easy. The less time I'm in the kitchen the more time I'm with my family.
***Helpful Hint: Always check for "Reduced for Quick Sale" meat. You can get great deals, for just a little money. Buy large quantities, put in freezer bags, and freeze immediately if you're not going to use it asap. Pinto Beans....Beef Stew....Mexican Beef Stew Spice up your plain pinto beans, add a cut up steak and a beef stew flavoring packet while they're cooking in the crock pot. Enjoy with fresh corn bread. You always have some leftover. For the next night, warm it back up in the crock pot and add some of your favorite vegetables. Now, you've got beef stew. If you have any leftover for the next night, add some salsa and some rice, and now you have a Mexican dish. Don't like the salsa and rice? That's ok. Add some egg noodles and enjoy. And to think, you started with just a bag of pinto beans. This is called making it stretch, yet each time you have a different flavor. Want sweet & salty....pop a bag of microwave popcorn, as soon as you open the bag add some miniature M&M's . Hold the bag shut and shake it around, the M&M's will melt onto the popcorn. It's delicious for a late night attack! Cut up a few potatoes (I wash them and leave the skin on), put them in a skillet with water about half way covering the potatoes, add some butter (I usually add a stick of butter cut up in slats), sprinkle parsley and garlic over the top. Put a lid on it, and simmer until the potatoes are soft...not mushy. Don't let the water run out, and stir them gently occasionally, so they don't stick. Don't over stir them, or they'll be mush. Have some leftover baked potatoes? Cut them in half, dig out the potato, put butter, cheese, and bacon bits on them, bake them until crispy. Add sour cream and chives. Save the inside of the potato to make mashed potatoes later. Or... Cut them in half, dig out the potato, and bake the skins until crispy. Meanwhile, mix your favorite baked potato toppings with the potatoes. Butter, sour cream, cheese, chives, etc. Warm this mixture in a saucepan on the stove. Put this back into the potato skins and enjoy!
Frozen Chopped Spinach (it comes in a box) Jar of Alfredo Sauce Shredded Cheese (any kind, I use whatever I have on hand. Usually cheddar, Monterey jack, pizza blend cheese, or anything of that nature) I do the taste test for the amount. I put a handful then see if that's enough...if not through in another handful. Garlic Powder Cook the spinach as directed on the box. Some of the boxes can be cooked in the microwave. Drain the spinach. In a microwave safe bowl, mix all ingredients. Microwave until hot and the cheese is melted. Serve with crackers, bread, or chips. It's YUMMY!!
Shrimp & Crab Fettuccini Alfredo Crab Meat (Imitation is cheap) Frozen Shrimp (I buy the precooked, so all you have to do is reheat it.) Jar of Alfredo Sauce Fettuccini Noodles Cook the Noodles as directed on the box. Put the shrimp in a separate saucepan with some olive oil. Then, put in the crab meat and Alfredo sauce. I put some garlic in there, too. Once the noodles are done, mix together. And, PRESTO! Shrimp & Crab Alfredo just like you pay $12.00 for at Red Lobster. I don't think I paid $12.00 to make a whole pot full. :) It's great with the Red Lobster Rolls.
1 pkg Biscuit Mix Shredded Cheddar Cheese Milk ( I think it's about 1 cup to make it the right consistency. You want it to be sticky so they'll stick together as you spoon drop them on the pan. Mix together and spoon drop onto a pan sprayed with non stick spray. Cook until browned. Meanwhile, melt a tablespoon of butter with a little bit of garlic. It's to taste, really. Some people like a lot of garlic, some people don't. As soon as you pull the rolls out of the oven, brush the butter garlic mixture on top. And, VIOLA! You have Red Lobster Rolls.
Start by boiling a whole chicken. About an hour, it depends on the size of the chicken. When it starts to fall apart, it's done. Pull all the chicken off the bone and cut into pieces in the bottom of a deep baking dish. Next mix together a can each of mushroom, celery, and chicken soup and 1 c. of chicken broth. I usually add in some garlic powder to the soups. Pour this soup mixture over the chicken. Next pour on two cans of mixed vegetables. In another bowl, mix together 1 stick melted butter, 1 c. flour, and 1 c. milk. I usually double it, I like a lot of crust. Pour your crust mixture over the top and bake on 350° until golden brown. Usually about an hour. It needs to cook slow, so that the middle gets done and it's not doughy. ENJOY!! It's fabulous. We love it!!
2 lbs Hamburger Meat 2 lbs frozen tater tots 1 can cream of mushroom soup 2 cans cream of chicken soup shredded cheddar cheese Grease bottom of 9x13 casserole dish. Brown meat, drain, crumble into the bottom of the casserole dish. Mix soups together and pour this mixture over the meat. Place the frozen tater tots on top of the soup. Bake @ 350° until bubbly. Sprinkle shredded cheddar cheese over the top and put back into the oven until the cheese is melted. PRESTO! Yummy, casserole. This is great to make ahead of time, freeze, and then bake. 2 lb bag hashbrown potatoes ( I prefer the shredded, but you can use the diced.) 1 pt. sour cream 1 can cream of chicken soup 1 stick butter 1 cup grated cheese 1 small onion, chopped Thaw out potatoes, mix with all other ingredients. Topping (optional) - 1/4 stick butter, melted, mix with crushed corn flakes. Sprinkle on top. Bake @ 350° for about 45 minutes.
Canned Peaches 1 c. sugar 1 c. flour 1 c. milk 1 stick butter Pour the canned peaches in the bottom of a casserole dish. Mix the remaining ingredients and pour over the peaches. Bake @ 350° until golden brown and bubbly.
Cream Together: 1/2 stick butter 8 oz. cream cheese 1 c. confectioner's sugar
In another bowl, mix together: 3 1/2 c. milk 2 small pkgs instant vanilla pudding
Fold in to the pudding mixture: 1 lg tub cool whip
Combine the two mixtures together.
Crush 1 lg bag of Oreo cookies. Leave some of the cookies whole, in order to line the bottom.
Alternate layers, starting and ending with cookie crumbs. Keep cool. It's better to make the day before, so that it can completely set up and get cold. It can be put in a plastic flower pot, preferably one that hasn't been used to grow flowers. You can also put in some gummy worms.
3 full T. cocoa 1/2 c. butter 1 c. sugar 2 eggs 1 t. vanilla 1/2 c. flour 1/2 c. chopped nuts (pecans, walnuts, etc.)
In a large saucepan, melt cocoa with butter. Remove from heat. Blend in sugar, add eggs one at a time (beat well after each). Stir remaining ingredients, mix well, but do not overmix. Spread in a well-greased 8" square pan. Bake 25 to 30 minutes @ 350°. Enjoy.
In a skillet, brown 1 lb hamburger meat. You can also use refried beans. Put the desired filling in a flour or corn tortilla. I also put some mozzarella cheese in before wrapping it. Wrap it up by folding the bottom first, then folding one side at a time. Put it upside down in a well-greased baking pan. You can buy a can of enchilada sauce at any store. It's in the taco/Mexican food section. Pour some over the top of the enchiladas, bake @ 350° until warm. Enjoy with grated cheese and sour cream. You could also add lettuce and tomato. **I do not claim this as authentic Mexican, it's my own easy version of enchiladas.** also referred to as Mayonnaise Rolls
2 c. self-rising flour 1/2 c. mayonnaise 1 c. milk
Mix together. Fill muffin tins about half full and bake at 350° until done and light brown on top. You can up the temperature when almost done to give them a more golden brown top. These are similar to rolls.
To make them low fat, use light or fat free mayonnaise and fat free milk. For 'Weight Watchers', points value is 2.5 per muffin when using light mayonnaise and fat free milk.
